Technology Details:

The invention specifically provides the gluten-free binder composition for millet flours with no added synthetic additives and preservatives, having a better shelf life and nutrient composition. Dough made from the millet flours added with the above improved gluten-free binder compositions has desired cohesiveness, stretchability, and more water absorption capacity without adding any synthetic additives or preservatives to prepare bread/ noodles/ pasta/ chapati/ roti with better sensory parameters. The resultant food items are soft, easily breakable and chewable with good textural parameters and good storage life. The present invention emphasizes gluten-free flour composition for millets and making chapati with good dietary and rheological properties. The present invention particularly relates to developing millet-based gluten-free flour composition using the functional ingredients comprising guar, psyllium, xanthan, gum Arabic and tamarind gum alone or in a specific combination. The invention is specifically to provide a gluten-free millet flour composition, a minimally processed flour mix, no added synthetic additives or preservatives, with better textural properties and good nutrient composition.
