Small and medium-scale dairy producers encounter financial hurdles due to high costs of freeze-dried Direct-Vat-Set (DVS) starter cultures for manufacture of fermented milk. These costs limit profitability and hinder market expansion. Further, as per the available literature liquid starter culture has lesser shelf life (one week at refrigeration storage; one day at room temperature) and requires regular propagation to maintain the cultures in active form. Moreover, maintaining starter culture blends in liquid form is biggest challenge, as in the blend single strain dominance is the major problem. To tackle this issue, there is a requirement of a cost-effective liquid starter culture blend in DVS form, which comprises high cells with desired ratio with greater metabolic activity.
Technology Details:
The solution offers a cost-effective method for preparing a stable liquid starter culture blend in DVS form for fermented milk production. By utilizing paneer whey and additives, it ensures high starter counts, fast coagulation, and stability at varying temperatures. This innovation significantly reduces production costs and accelerates the production process to just four hours of incubation.
