In India, the processing industries are paying huge royalties for using the exotic processing potato varieties for making French fries. Alternatively, ICAR-CPRI, Shimla has developed ‘Kufri FryoM’ an early maturing, main season, high yielding processing potato variety suitable for cultivation in North West and central plains or similar agro-ecologies. It offers field resistance to late blight, possesses very good keeping quality, moderate tuber dry matter (20%) and low reducing sugar (<150 mg/100). The variety yields 30-35 t/ha and >80% processing grade tubers. The variety will offer the profitable business opportunities in domestic and international processing markets. So far, the technology has been licensed to 15 different public/private industries on non-exclusive basis across the country and successfully catering the processing requirement of the industry.
